2 Ingredient Banana Pancakes

First apologies for my absence, I know it’s been far too long but life has been busy! My sister from Germany was in town a few weeks back, I’ve been planning this once small and intimate birthday party for Luca, which has turned into a 30+ guests affair, my mom has been in town for said party and then we have our trip for a family reunion in Italy planned for mid-May! Through all this craziness I just wanted to share my favorite easy-peasy 5-minute breakfast I make at least 3-4 times a week for Luca and he just loves it!

You need: (makes about 3-4 pancakes)

  • 1 banana
  • 2 eggs

Mash banana and mix in with well-whisked eggs, I like to use ripe bananas for their extra sweetness. Heat up a small frying pan and lightly coat with oil or butter (I like to use coconut oil!). Pour banana-egg-batter into pan and wait for little bubbles to appear, then flip! Top with berries for some extra vitamins and voila you’re all done! No need for any syrup because the sweetness of the bananas is enough for baby’s little taste buds. They are naturally dairy and gluten-free and so easy to make!
